Day 1:

Start with legendary Balıklıgöl, one of the best-known symbols of Şanlıurfa. The place is linked to the story of Prophet Abraham, and the fish in the water are regarded as sacred. As you walk beside the pool, you see people feeding the carp, taking photographs and resting in the shade of the colonnades and nearby mosques. 

From Balıklıgöl, follow the path up the hill to Şanlıurfa Castle. The structure stands above the old town and looks across the roofs, domes and courtyards below. Even if access to the inside is limited, the walk is pleasant, and from the top, you gain a wide view over the city and the plains that stretch out towards Harran.

For lunch, try liver kebap, served on skewers with warm flatbread, onions, parsley and fresh herbs. If you prefer something lighter, you can choose çiğ köfte made with bulgur, tomato paste, spices and pomegranate molasses, usually wrapped in lettuce with plenty of greens.

Then, wander through the historical bazaars around Haşimiye Square, where copper workshops, textile sellers and spice stalls fill the narrow streets. Strings of dried peppers and aubergines hang overhead, and jars of isot line the shelves, creating a lively scene for both photographs and small purchases. You can visit Gümrük Han, a historic caravanserai with a central courtyard and stone arcades. Here you can sit at a low table, drink traditional coffee or tea and quietly watch the rhythm of local life.

In the evening, choose a restaurant in the old streets or close to the bazaars. Sample world-famous Urfa kebap and delicious Bostana Salad. Finish with a regional dessert such as şıllık, then take a gentle walk back to Balıklıgöl to see the pools and mosques lit at night.

Day 2:

On your second day, begin with Kızılkaya, also known as Kızılkoyun, an area of Roman-era rock tombs carved into a hillside near the city. Burial chambers are cut directly into the stone, some with decorated entrances or niches, and from the ridge, you can also look back towards modern Şanlıurfa.

Then, continue to Bazda Caves, a historic quarry area where stone was cut from the hillsides for building projects in the region. Large chambers, corridors and courtyards in the rock show the scale of this work and make the landscape feel almost like a man-made canyon.

Your next destination is Şuayip City, an abandoned stone settlement with the remains of houses, arches and narrow streets. The buildings blend into the rocky surroundings, and local tradition links the site to the prophet Shuayb, which gives the visit an additional meaning.

Towards the end of the day, go on to Soğmatar, a remote site that once served as a centre of worship connected with celestial bodies. Around a central hill, you see altars, inscriptions and reliefs that reflect interest in the moon, planets and stars, and from the top, you can look out over the wide plateau.

Return to Şanlıurfa in the evening. After a long day, enjoy a warm onion kebap cooked with whole onions and pomegranate molasses. As a dessert, choose künefe, a hot cheese dessert baked with fine strands of pastry and syrup, usually topped with pistachios, and end the day with a glass of tea.

Day 3:

Your third day stays in and around the city centre and focuses on museums, mosaics and a calmer look at Şanlıurfa. Start the morning at the Şanlıurfa Museum. The galleries lead you from the Neolithic period through the Bronze Age, Hellenistic and Roman times to the early Islamic era, with statues, reliefs, tools and everyday items that trace the long history of settlement and belief in the region. The museum also features dedicated sections for finds from Göbeklitepe and Karahantepe, presenting these sites as distinct collections within the broader narrative.

Around midday, choose a nearby place for lunch or return towards the old centre. You can try dishes such as patlıcan kebabı made with aubergine and meat cooked together, içli köfte with a bulgur shell and spiced filling, or a bowl of lentil soup, with lahmacun and ayran as lighter options.

In the afternoon, walk to the mosaics area at Haleplibahçe Mosaic Museum within the same complex. The floor mosaics from a Roman era villa show hunting scenes, mythological figures and detailed borders, and standing close, you can see how the small coloured stones form animals, armour and clothing.

For your final evening in Şanlıurfa, return to the old town. If possible, join a sıra gecesi, recognised as part of UNESCO’s Intangible Cultural Heritage, with music, songs and shared dishes. If not, choose a restaurant in a restored stone house or courtyard and order plates such as sac kavurma, vegetable stews, meze and salads with herbs and pomegranate. Finish with künefe and a glass of tea.
